and a visit from the Kona Ice Truck (Sugar Free Hawaiian Ice)

Shelly's Caprese Skewers

You need:
Bamboo skewers (I used 6" skewers from Sur La Table)
Storebought Pesto Sauce
Bocconcini (small Fresh Mozzarella Balls)
Fresh Basil Leaves
Cherry Tomatoes

Thread items onto bamboo skewers. Repeat until you’ve run out of skewers or ingredients. Drizzle skewers with pesto sauce nuke it for a few seconds to thin it out and sprinkle with Kosher salt and a few twists of black pepper.

Shelly's Italian Cannelini Tuna Salad (for a group)

4 (15 oz.) cans Cannelini Beans, rinsed & drained
1 (14 oz.) can Artichoke Hearts, drained, non marinated
3 (4 oz.) cans Ventresca Tuna Fillets, drained
1 1/2 cups Bruschetta Sauce, drained (solids only)
1 Tablespoon Lemon Olive Oil
2 Tablespoons Fresh Basil, chopped
1/2 teaspoon dried Oregano
Kosher Salt to taste
a few twists of Black Pepper

Mix everything together. Voila. Chill. Even better the next day when all the flavors have had a chance to love on one another. You can use other protein sources (chicken, shrimp, crab would all be yummy) but try and get a hold of Ventresca Tuna. Even if you hate tuna, you will love Ventresca tuna. Warning it is $$ but I'd rather have 1 can of Ventresca a month than 6 cans of dry, tasteless tuna any day. Premium pouch space = only the best. You can easily 1/2 or 1/4 this recipe.
